You can send the daikon my way! 😉 We were just at the Asian market (don’t get to go often) and I found some stuff to make Oden. I wasn’t planning on it & so I hadn’t looked at a recipe beforehand & now I’m regretting not grabbing some konnyaku & daikon while we were there!
Oh well, my husband bought me some parsnips to try to make do!

Daikon!! Put it and some ginger in the freezer – that will make them really easy to grate.
Then broil up some salmon and top it with a little grated ginger, a lot of grated daikon, some fresh lemon juice, and some soy sauce.
YUM. Also, good haul. I need to get myself to Mitsuwa!

The cookbook The Kind Diet by Alicia Silverstone would help you with those ingredeients. I have her cookbook out from the library at the moment.
